PostHeaderIcon Weight Watchers Meat Loaf

Ingredients

  • 4 tbs Worcestershire sauce
  • 3 lbs ground beef
  • 1/4 tsp thyme
  • 1tsp basil
  • 1 large onion diced and sweated
  • 1 & 1/2 c tomato sauce
  • 4 tbs brown sugar
  • 4 tbs chopped fresh parsley
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 4 large egg whites
  • 1 c quick cooking oats

Instructions

  1. If Sunday, invite Roan over.
  2. Preheat oven to 350
  3. Combine 1c tomato sauce, onion, parsley, brown sugar, salt, pepper, worchester sauce.
  4. Stir well.
  5. Add meat and oats. Stir just until blended.
  6. Perforate bottoms of 2 cheap foil pans.
  7. Coat with cooking spray
  8. Shape mixture into pans, place on a rack over a cookie sheet (to catch the fat)
  9. Brush remaining 1/2 cup tomato sauce over meat loaf
  10. Bake at 350 for 1 hour and 10 minutes or until done.
  11. Let stand 10 minutes before slicing
  12. Cut into 12 slices

Ingredients:

  • 1 cup(s) uncooked cornmeal, yellow
  • 1 cup(s) all-purpose flour
  • 2 tsp baking powder
  • 3/4 tsp table salt
  • 1/2 tsp baking soda
  • 14 3/4 oz cream-style corn, canned
  • 1/2 cup(s) buttermilk
  • 2 large egg white(s)
  • 2 tsp corn oil

Directions:

  1. Preheat oven to 400ºF.
  2. Coat an 8-inch square cake pan with cooking spray.
  3. Combine cornmeal, flour, baking powder, salt and baking soda in a large bowl.
  4. Mix well with a fork, then make a well in the center; set aside.
  5. Combine creamed corn, buttermilk, egg whites and oil in a medium bowl; mix until blended.
  6. Fold wet mixture into dry ingredients; mix until blended.
  7. Pour batter into prepared pan and smooth the top.
  8. Bake until a wooden pick inserted near the center comes out clean, about 20 minutes.
  9. Allow to cool in pan on a wire rack for 10 minutes.
  10. Remove from pan; cool completely before cutting into 8 squares.

PostHeaderIcon Chicken Parmigiana

Ingredients:

  • 1 lb boneless, skinless chicken breast, pounded ¼ inch thick
  • 2 egg whites, lightly beaten
  • ½ C breadcrumbs
  • 1 tbsp Italian seasoning
  • 4 tsp oil
  • 2 cups canned tomato sauce
  • ½ C part-skim shredded mozzarella cheese

Directions:

  1. Preheat oven to 350°. Coat oven proof dish with cooking spray.
  2. Brush chicken on both sides with egg white.
  3. Mix breadcrumbs and seasoning on a plate; dip chicken in breadcrumbs, turning to coat.
  4. Heat oil over med heat.
  5. Cook chicken until lightly browned on both sides and set aside.
  6. Put half the tomato sauce in the dish, add chicken, top with remaining tomato sauce. Sprinkle with cheese.
  7. Bake about 15 min, until bubbling.
