Baked Pesto Chicken

Summary: Lovely, quick three ingredient recipe.

Ingredients

  • cooking spray
  • 1/2 cup pesto sauce
  • 4 boneless, skinless chicken breasts
  • salt and pepper to taste
  • 1/2 cup shredded low-fat mozzarella cheese

Instructions

  1. Preheat oven to 375°.
  2. Slice chicken breast into strips and season with salt and pepper.
  3. Spray a 9″x12″ baking pan with cooking spray. Spread 1/4 cup of the pesto on the bottom of the pan. Arrange chicken horizontally so it doesn’t overlap. Spread remaining pesto in top of the chicken. Cover pan with foil and back for 30 min. or until chicken is just done.
  4. Uncover pan and scatter cheese evenly over the chicken. Return to oven for 5 min. or until cheese is golden.

Notes

This was really good but a little on the salty side. It might be good with fresh mozzarella.
